Super Easy Kale Salad Recipe

INGREDIENTS

1 bunch kale, stalks removed and discarded, leaves thinly sliced
1 lemon, juiced
1⁄4cup extra-virgin olive oil, plus extra for drizzling
kosher salt (I used about 1/2 teaspoon)
2 teaspoons honey
fresh ground black pepper
1 mando, diced small (about 1 cup)
2 tablespoons toasted pumpkin seeds

DIRECTIONS

In a large bowl, massage the kale with half of lemon juice, a drizzle of oil and a little kosher salt until the kale starts to soften and wilt. Set aside.
In a small bowl, whisk remaining lemon juice with lots of freshly ground black pepper, honey and 1/4 cup of oil until a dressing forms, season with salt and pepper.
Toss the mango and pepitas to the kale, then add the dressing over the kale. Toss again, season and serve. The salad can be refrigerated overnight.
