Spaetzle Recipe

A special way to make quick & amazing spaetzle. The idea with the bag is really cool! Fast, easy, and cool.

– 1 cup flour (any kind should work, maybe you should try a fancy one, I just use white flour)
– 1/4 cup milk
– 2 eggs
– 1/2 teaspoon ground nutmeg
– 1/2 teaspoon salt
– 2 tablespoons butter
– a pinch of freshly ground pepper (this is totally optional, though again, try something fancy like white pepper)
– a gallon size zippered plastic bag (or a pastry bag if you have one)

1. Mix the dry ingredients, mix the flour, salt, nutmeg, and pepper in the plastic bag.
2. In a separate bowl, whisk the eggs and milk together.
3. Pour the milk and egg mixture into the plastic bag, zip it up and knead it until thoroughly mixed and sticky.
4. Bring 3 quarts of water to a boil in a big pot then reduce to a simmer
5. Clear the very tip of the corner of the plastic bag and cut it off, the smaller the hole, the smaller the dumplings, .
6. Gently squeeze the dumplings into the simmering water, try not to make them too long. Cook for 3 to 4 minutes or until the spaetzle floats to the surface, stirring gently to prevent sticking. Use a slotted spoon to scoop them out and place into a frying pan.
