Menudo Recipe

An easy & special way of making Filipino Menudo with very basic ingredients that you’ll certainly be addictive & love it!

      2 lb chicken breast or boneless thighs
      1/2 cup carrots diced
      1/2 cup bell pepper diced
      1/2 cup potatoes
      1 cup chicken broth
      1/2 cup water
      1/4 cup soy sauce
      1/4 cup tomato catsup
      1/4 cup onion
      2 cloves garlic minced
                 2 tbsp olive oil



1. Heat one tbsp olive oil, add all vegetables and spices except potatoes and sautee for 3 minutes. Set aside.
2. Brown chicken with olive oil. Add chicken broth, water, catsup and soy sauce. Simmer uncovered for 10 minutes.
3. Add potatoes. Simmer for more 5-10 minutes, stiring occasionally.
4. Add the set aside vegetables. Cook for 3 more minutes. Adjust the seasoning, and serve hot.
