Lemon Cake Recipe

You won’t believe how Quick easy yummy this Lemon Cake Recipe is. And perharp this is my best ever Cake I made! Every thing works well together and can easily made just in bowl by hand.

  • Cooking time 20-25 mins
  • Makes 1 cake


      120 grams butter, softened
      1 cup flour
      3 tsp baking powder
      2/3 cup Chelsea White Sugar
      2 large eggs
      4 Tbsp milk
      grated rind and juice of one lemon
      juice of 1 lemon
      1/2 cup Chelsea White Sugar
              few Tbsp boiling water (to let the sugar dissolve)


        1. Preheat oven to 180˚C. Grease and line a square 18cm baking tin with baking parchment
        2. Put all cake ingredients together in a food processor or an electric hand mixer, process for 15 seconds or until combined. Pour mixture into tin and bake for 20-25 mins.
        3. For topping – mix the lemon juice, sugar and boiling water together until become runny. While it’s still hot, spoon topping onto cake . Leave to cool in tin before turning out.
