Easy Pumpkin Roll Recipe

This is an easy Pumpkin Roll for a beginner and it’s always delicious every time I make it.Definitely a big hit and my family favorites!”

Crisco ® Original No-Stick Cooking Spray
3/4 cup Hungry Jack Complete Pumpkin Spice Pancake & Waffle Mix
1/3 cup sugar
1/4 teaspoon salt
4 large eggs
1 (8 oz.) package cream cheese, softened
1 cup powdered sugar, plus additional for garnish
1 teaspoon vanilla extract
1. Preheat oven to 400°F. Spray 15x10x1-inch jelly roll pan with cooking spray. Line with wax paper. Coat wax paper with cooking spray.
2. In a large bowl, whisk together pancake mix, sugar, salt and eggs until blended & smooth. Spread batter evenly into prepared pan. Bake 8 to 10 minutes or until a toothpick inserted in the center comes out clean. Quickly invert cake on top of clean towel, carefully peel off wax paper. Allow to cool 10 mintues.
3. In a large bowl, whisk cream cheese, powdered sugar and vanilla until smooth.  Pour over the cake to spread evenly. Roll up cake, beginning with the narrow end. Wrap tightly in plastic wrap. Chill in refrigerator for 2 hours. Sprinkle powdered sugar on top. Cut into 12 slices.
