Easy Buckeye Recipe

If you’re a chocolate lover, don’t skip this easy- awesome Buckeye Recipe. A great combination of peanut butter and chocolate. Even you’re not a very good cook, this was such an easy recipe and everyone loved them!

Ingredients

  • 2 cups creamy peanut butter, (not all-natural)
  • 1/4 cup (1/2 stick) butter or margarine, softened
  • 3 3/4 cups (16-oz. box) powdered sugar
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 2 tablespoons vegetable shortening
1. Line a baking sheets with wax paper, set aside.
2. In a medium bowl, combine peanut butter and butter, beat until creamy. Add powdered sugar and beat until a smooth stiff dough forms. Using a spoon and shape into 1-inch balls; place on prepared baking sheets. Freeze for 1 hour.
3. In microwave-safe bowl, melt morsels and shortening over medium, uncovered,  on high(100%) power for 1 minute; stir. If morsels retain some of their shape, microwave at additional 10- to 15-second intervals, stirring just until melted.
4. Using a toothpick inserted into a ball, dip peanut butter centers into melted chocolate, leaving a small portion uncovered. Shake off excess chocolate. Return to baking sheets; remove toothpick, chocolate side down. Repeat with remaining balls. Refrigerate 30 minutes or until chocolate is set. Store in covered container in refrigerator.
